Monk Fruit - My Favorite Ingredient

Want to know know something? One of my favorite ingredients in my desserts is MONK FRUIT.
In case you haven’t heard of monk fruit before today, it is a small round fruit originating in southern China that has been used for centuries in Eastern medicine as both a cold cure and a digestive aid.
Fun fact: Although monk fruit resembles a lime or kiwi, it is actually a part of the gourd family, making it more like a cucumber or a melon.
The reason I use monk fruit is because the mogrosides taste 100 - 250 times sweeter than sugar and can be used in all the same ways sugar can. The best part is that it is ZERO CALORIES, making it perfect for the health-conscious and those following ketogenic diets. I know what you’re thinking, “I NEED TO GET SOME MONK FRUIT!” But wait! It gets even better. It's also a powerful antioxidant and anti-inflammatory so it is an excellent alternative for those with diabetes.
